ary Colacci arrived in Louisville from Italy in 1908. Her family immigrated to Colorado so that her father could work in the coal mines. She and her husband Mike, also an Italian native and a coal miner, opened the Blue Parrot in 1919. Mary's handmade pasta became famous throughout Boulder County. Her sauce included locally grown sun-dried tomatoes and was occasionally flavored with rabbit or pheasant. A generous hostess, Mary always kept a spaghetti kettle simmering. Hungry drifters called her establishment "the hobo's rest." Colacci family members still run the eatery. |
